Hatch Green Chile Fest with Terra Waconia

Don’t miss Terra Waconia’s annual celebration of the world’s most revered green chiles, sourced from Hatch, New Mexico. Late summer is the long-anticipated season when the Hatch green chiles are ready for harvest, their roasting aroma wafting through the air throughout New Mexico. Chef Craig Sharp spent formative years as a chef in New Mexico, and now looks forward annually to the ritual of turning this special pepper into a feast of love and care for his guests.

Chef Craig and Terra partner Tracy LeTourneau carefully source the best chilis, ship them overnight from New Mexico at their prime, then hand-roast them individually over an apple wood fire. Then the magic begins…and a creative feast is the outcome. We will be treated to authentic meal celebrating the Hatch chile in throughout the menu, with a centerpiece of rich, brothy Pork Posole, a traditional gift of the soul of New Mexico.
